Try this Ooni pizza dough recipe, which works with any type of outdoor pizza oven! This dough makes the perfect supple crust that’s ideal for firing at high temperatures. It comes out light and chewy on the inside and charred on the outside, with the perfect hydration ratio for cooking at high heat. Here’s how to do it!
Our Ooni pizza dough recipe makes the best dough for pizza ovens. The crust turns out nice and crisp with a lovely flavor. The pizza dough has a lower hydration which is ideal for cooking pizza quickly at a high heat.
Place your Ooni Pizza Steel 13 in your conventional oven, and preheat to 275°C (530°F), or to its highest temperature. Preheat the steel for at least 30 minutes or up to 1 hour. Place a dough ball on your lightly floured work surface then use your fingers to push the air from the centre out to the edges.
The low hydration dough is exactly the kind you would want for an outdoor pizza oven designed to heat to temperatures in excess of 900°F. If you use a pizza dough with a higher hydration, the dough will not have time to cook through before the cheese and toppings start to burn. This recipe isn’t just for Ooni pizza ovens.
