1. Bring a large pot of salted water to boil. Add some olive oil and cook the spaghetti al dente. Set aside 1 cup of the pasta water before you drain the pasta. In the meantime, continue to prepare the sauce.
2. Warm the olive oil in a large skillet on low heat.
3. Add the garlic and red crushed peppers and cook until the garlic starts to soften and turn yellow-light brown in color. Stir frequently and be sure not to over cook the garlic. This may take 8-10 minutes.
4. Add the pasta and 1/4 cup reserved pasta water into the skillet and toss with the garlic infused olive oil until well combined.

2. While the spaghetti is cooking make the sauce: If you don't use dried chili flakes, remove the seeds from the chilies and finely chop. Peel and finely slice the garlic cloves.
3. Heat the olive oil gently in a frying pan. Add the garlic and chili and cook gently for a few minutes, or until the garlic is pale gold, which will be enough time for the flavorings to infuse the oil (take care not to burn it!). Stir in chopped parsley.
4. Drain the spaghetti still "al dente", reserve 1/2 cup cooking water.
