1. First, in a large bowl combine eggs and milk then stir in breadcrumbs. Next add onion parsley, salt, sage, and 1/8 teaspoon pepper. Mix them together a few times then add in the beef and mix well. I suggest using your hands, and this is how I was taught, it mixes faster and better than using a spoon of any kind.
2. Shape your meatloaf into a 'loaf' shape if not using a bread pan, though I suggest you do, or use the mini loaf pan I mentioned above. Then go ahead and bake in a 350-degree oven for 50 minutes. Then make sure to spoon off excess fat.
3. Mix together the ketchup, sugar, and dry mustard, mix it well then spread over the top of the meatloaf.
4. Then return to oven for 10-15 minutes. This makes about six servings.

1. Preheat oven to 375°F (190.5°C).
2. Line a baking sheet with aluminum foil and set aside.
3. Using a large mixing bowl; combine all of the ingredients for the meatloaf with a spatula. Use hands to finish mixing so that all of the ingredients are well combined. Transfer the meat mixture to the lined baking sheet and use your hands to form into a loaf.
4. Wash those hands then prepare the glaze. In a small mixing bowl combine the glaze ingredients with a whisk. The glaze will resemble the color of a barbecue sauce with a slight orange hue.

1. Preheat the oven to 350° F and line a rimmed baking sheet with aluminum foil or spray a 9x13-inch baking dish with nonstick cooking spray, set aside.
2. In a medium bowl, stir the breadcrumbs and milk together, set aside to allow the breadcrumbs to absorb the milk.
3. Roughly chop the onion, pepper, and garlic. Use a food processor or chopper to finely mince the vegetables, set aside. Alternately: finely mince the pepper, onion, and garlic with a knife.
