1. Clea the potatoes - scrub them well with a brush and water.
2. If using non-organic potatoes, peel the skin. If they are organic, you can keep the skin on and this will get you extra nutrients.
3. Place the potatoes in a saucepan and cover them with water. Bring to boil, then reduce to medium heat and simmer for about 4 minutes. This is the key step t the fluffy inside and crispy outside.
4. Drain the boiled potatoes, dry thoroughly, and then place them in an oven-safe dish or baking sheet. I decided to keep mine whole, however, you can also chop yours up into smaller 'roasties'.
