2. In a large mixing bowl combine plain flour, arrowroot (tapioca) flour, baking soda, salt, mixed dry herbs, smoked paprika and cumin.
3. To your chia egg add - tomato paste, worcestershire sauce, soy sauce and combine.
4. Make a well in the centre of your flour mixture and pour in the chia egg mixture. Add in the cooked rice, okara, coriander and nutritional yeast. Mix until combined and a dough-like mixture forms. Note: It should be moist but hold together when pressed between your fingers. If it’s too dry, add a tsp of water at a time. If it’s too wet, add one teaspoon of flour at a time.

3. Combine all ingredients - except the sesame seeds - in a large mixing bowl and pour the vegan egg over it. Mix well (I use gloved hands). Form into 6 equal size patties (a digital kitchen scale is helpful). Press sesame seeds into both sides of the burgers. Mist each burger, top and bottom, with olive oil spray (if using).
4. Place the burgers on parchment paper and air fry for 20 minutes, turning over at 10 minutes. If you have a small air fryer, you may have to do this in batches.
