1. Remove and giblets and neck bones from the turkey cavity (many times the giblet pack will be tucked under the skin by the neck). Pat the turkey dry.
2. Tuck the butter slices and garlic in-between the skin and the turkey breasts. Season the turkey with salt and pepper.
3. Oil the basket to help prevent any sticking. Place the turkey legs down in the basket. Insert the meat thermometer into the breast so that the tip doesn't touch bone and the dial is easily read when the basket is in the cooker. Place the basket in the Oil-Less Deep Fryer.
4. Turn on the cooker to medium high cooking and cook for about 10 minutes per pound (14lbs.= approx. 140 minutes or 2 hrs 20 minutes).

1. To dry brine the turkey, place the bird on a cutting board and remove the giblets and neck from inside the cavity. Also, remove any plastic holders or pop-up thermometers.
2. Rinse the turkey well and pat dry inside and out with paper towels.
3. Sprinkle 1 teaspoon of salt inside the turkey cavity and sprinkle the rest evenly over the entire bird and under the skin, where ever possible.
4. Place the turkey breast-side up on a wire rack on a rimmed baking sheet or roasting pan and refrigerate uncovered for at least 1 day, but ideally 3 days. You do not need to rinse it or pat it dry before cooking.
