1. Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
2. In a large bowl using a hand-held mixer or stand mixer fitted with a paddle attachment, beat the butter for 1 minute on medium speed until completely smooth and creamy. Add the brown sugar and granulated sugar and beat on medium high speed until fluffy and light in color. Beat in egg, egg yolk, and vanilla on high speed until combined. Scrape down the sides and bottom of the bowl as needed. Beat in 1/4 cup (74g) of Nutella until combined.
3. Whisk the flour, cornstarch, baking soda and salt together in a large bowl. On low speed, slowly mix into the wet ingredients until combined. Add 1 cup (180g) of chocolate chips and mix on low for about 5-10 seconds until evenly disbursed. Turn the mixer off and add the remaining Nutella. Beat for 5-10 seconds so the Nutella streaks through the cookie dough and is not fully mixed. Dough will be a little crumbly, that is OK. Dough will be extremely crumbly if the remaining Nutella was mixed in too much.
4. Scoop and roll balls of dough, about 1 Tablespoon of dough each, into balls. The warmth of your hands will help them come together. Arrange 3 inches apart on prepared baking sheets.

1. Start by lining a s small baking sheet or plate with parchment paper. After stirring the Nutella jar vigorously, use a measuring teaspoon to drop 11 dollops of Nutella on the parchment paper. Make sure to leave enough space between each dollop so they don't merge together. Place in the freezer.
2. In a medium bowl, cream the butter and both sugars together. Add in the vanilla and the egg yolk and mix again until smooth.
3. To fill the chocolate chip cookies with Nutella, grad one cookie dough ball and flatten it between the palm of your hand, grab one dollop of Nutella from the freezer, place it in the middle and gently for the edges of the cookie inwards, seal it and roll the cookie dough between the palm of your hands and place the cookie dough ball back on the baking sheet. Repeat the process with all the cookies making sure to pull out the Nutella dollops as you go, because they melt very fast!
4. After the cookies chilled for 30 minutes, bake them for 12-14 minutes or until the edges start looking a little golden brown and the centers is still pale. The cookies might look under baked but don't worry! They will continue baking as they cool down.

1. In a mixing bowl of a stand mixer, cream together butter and sugars on high speed until light and fluffy (about 3-4 minutes). Add eggs one at a time, mixing well after each addition. Use your spatula to scrape the sides of your mixing bowl between each egg addition, to make sure all the batter is incorporated.
2. Add in cocoa, cake flour, all-purpose flour, cornstarch, baking soda, and salt and set mixer on lowest speed setting to stir until dough is just combined. You want the dough to be smooth and uniform in color, but you don't want to overmix it, so this should only take a few revolutions and less than 30 seconds. Stir in 1 cup of chocolate chips (reserve the remaining 1/3 cup).
3. Place the dough in the fridge for about 30-60 minutes to chill. You want the dough to be cold (but not to the point that it's hard) so it's less sticky to work with and won't spread too much in the oven.
4. Preheat oven to 410°F.

1. Line a baking sheet with parchment paper or a silicone mat. Using a heaped 1/2 teaspoon, scoop the Nutella onto the baking sheet. Freeze until solid, at least an hour.
2. Preheat oven to 350°F. Line another baking sheet with parchment paper or a silicone mat and set aside.
3. Add the flour, salt, baking soda, cane sugar or erythritol, and the brown sugar or erythritol plus molasses into the bowl of stand mixer. Alternately, you can add the ingredients to a large mixing bowl and stir by hand. Nothing a little elbow grease can't solve. Using the paddle attachment, stir the dry ingredients on low speed. Add in the melted butter, unsweetened almond milk, vanilla extract, and eggs or egg replacer and continue to stir until combined but not overworked. The dough will be a bit crumbly, but that's okay. Just use your hands to squish it all together. Stir in the chocolate by hand.
4. Using a 1/2 tablespoon measure, scoop the dough into balls and place on the baking sheet two inches apart. Press down into flat. Fetch the baking from the freezer and place the frozen Nutella in middle of each flattened cookie. Carefully bring the edges of the cookie dough to cover the Nutella, pinch to close, and gently squish to form a thick cookie.

2. Melt butter in a saucepan over medium-high heat. The butter will begin to crackle and foam. Make sure you whisk consistently during this process.
