1. Place waxed paper in a baking sheet pan.
2. Add dark chocolate chips and 1 teaspoon canola oil to a medium glass microwave safe bowl. Heat in microwave for about 1 minute. If not melted, heat in 30-second increments until it is melted. Remove from microwave and stir until smooth. Add 1 teaspoon peppermint extract to melted dark chocolate and stir until well-combined.
3. Pour chocolate into the prepared sheet pan and place in the freezer until set, about 3 minutes.
4. Repeat the same process with the white chocolate chips. Once melted and smooth add the remaining 1 teaspoon peppermint extract and stir. Remove the sheet pan from freezer and spread white chocolate over dark chocolate.

Place the bowl over small pot of simmering water, making sure the bowl doesn’t touch the water. Allow the cacao butter and coconut oil to melt, stirring occasionally. The mixture will be thin.
4. With the mixture still over the simmering water, add the cashew butter and mix to combine. Add the maple syrup, salt, and vanilla and mix until smooth. Remove the bowl from the pot and allow to cool for about 10 minutes before adding the peppermint extract and whisking again to ensure everything is incorporated.
