1. In a large mixing bowl combine the flour, yeast and salt then add 1 tablespoon of olive oil.
2. Add the water and mix well until you can see no more dry flour and you have a wet, slightly lumpy looking mess. Make sure to scrape right into the bottom of the bowl. (See my picture in the collage near the top of my post above for reference).
3. Cover with cling wrap or a clean shower cap and leave on the kitchen counter for a minimum of 7 hours and a maximum of 9 hours. Do not refrigerate and do not leave anywhere really warm. Just normal room temperature is fine.
4. About 20 minutes before the time is up preheat your oven to 400°F and line a cake pan or brownie pan with parchment paper. (any pan from 8 x 8 inch to 8 x 12 is fine or an 8 or 9 inch round cake pan - just ensure it's metal. Don't use silicone). You can even spread the dough out on a parchment paper lined regular baking tray if that's all you have.

1. Preheat oven to 400° Mix together the flour salt, thyme and granulated garlic in a large mixing bowl. Make a well in the centre and set aside
2. In a medium bowl add warm water. Sprinkle the sugar and yeast on top. Give one quick stir. Set aside to proof for 5-10 minutes. Yeast should bubble up to surface. Mine usually takes 5 minutes. Then stir in the olive oil.
3. Pour yeast into flour. Mix with a wooden spoon until completely combined. Drizzle some oil on your hand(s) and form dough into a ball.
4. Cover bowl securely with plastic wrap and let rise for 45-60 minutes or until roughly doubled in size. (First rise) I place it beside my stove which I preheat early and I keep my house warmer on baking day.

1. In a large mixing bowl combine flour, salt and yeast. In a jug combine warm water and agave to dissolve. Then pour liquid over the flour mixture. Stir to combine until you have a sticky dough (the warm water makes it sticky and wet).
2. In a clean mixing bowl add 1/3 cup olive oil, and transfer dough to bowl. Roll the dough to coat in olive oil. Cover the bowl tightly with wrap and transfer to the fridge overnight, or for up to two days.* (Make sure the bowl is big enough for the dough to double in size).
3. Remove dough from fridge and line a baking tray with parchment paper. Transfer dough onto tray and push out with hands as best you can to cover tray entirely. Wait 30 mins to 1 hour for the dough to come to room temperature. It should soften and rise considerably. (Time is dependant on how warm your home is. In the Winter it will take longer than Summer).
4. Preheat oven to 450F/230C. Pat focaccia dough again to ensure it's the same thickness throughout (about 1-inch thick). Then dimple the entire dough by pushing your fingers into the dough like you're playing piano. (If you have long nails you can do this with your knuckles). Drizzle with more olive oil and sprinkle with more salt and pepper.
