1. IF USING THE SLOW COOKER: Remove the chicken from the package and discard the giblets inside. Place it in your slow cooker. Roughly chop the onion, celery, and carrot and add to the slow cooker. Add the salt, garlic, and water. Set the cooker on low, cover, and cook for 8 hours.
2. IF USING THE STOVE TOP: Place all of the ingredients in a large stock pot (you may need a bit more water to make sure the chicken is completely covered), bring to a simmer, and reduce the heat keeping the pot at a simmer for one hour.
3. When the broth is finished cooking, gently remove the chicken from the pot. If using the slow cooker the chicken will most likely fall apart as you move it. That is okay, and good! Set it aside to cool while you work with the broth.
4. Line a strainer with cheesecloth or several layers of paper towels. Place over a container and strain the broth into it. Discard the veggies. Let the broth cool so that the fat will separate to the top. Once you have a layer of fat on top, skim it off and discard.

1. Remove the pouch of giblets from the cavity of your chicken and use for another purpose. If you chicken came with a neck, you can cook that right along with the rest.
2. In your Instant Pot or a Dutch oven, place the chicken (and neck, if you have one), boxed stock, onion, garlic, vinegar, salt, poultry seasoning and smoked pepper or peppercorns.
3. Bring up to pressure and cook at high pressure for 33 minutes. (If using a Dutch oven, simmer over medium-low heat until the chicken is cooked through and you have a nice, rich stock, about 2 hours. You may have to flip the chicken to get it to cook evenly).
4. For the most tender meat, allow for complete natural pressure release, about 30 minutes.

WEBDec 16, 2010 · Ingredients Chicken. 1 large (4-5 lbs.) fryer chicken (sometimes called a Hen), neck and gizzards removed; 1 large onion, …

1. Place the chicken, onions, carrots, and celery in a large stockpot and cover with water. Bring to a boil, then reduce heat so water maintains a gentle simmer. Cover and cook chicken for at least 1 hour or until cooked through (about 165 degrees).
2. While the chicken is cooking, mix flour, baking soda, and salt together in a bowl. Cut shortening into flour mixture with your fingertips until it resembles small peas. Add milk — 1/4 cup at a time, you may not need a full cup — and stir until a ball of dough just begins to form, being careful not to over-mix.
3. Divide the dough into two equal halves, loosely shaped into rectangles. Roll each half of the dough out onto a floured piece of waxed paper or parchment paper. Roll about 1/4 inch thick. Using a pizza cutter or sharp knife, cut dough into rectangles about 1 inch wide by 3 inches long. Allow the strips to rest and harden for at least 2 hours. You could also make these the night before and let them sit out, loosely covered with a tea towel or plastic wrap.
4. Once the chicken is done, remove it from the broth and let it cool. Remove chicken from the bone (this shouldn’t be hard, it should be falling off pretty easily at this point) and shred into medium-sized pieces, discarding bones and skin.
