Total Time: 15 minsServings: 6Calories: 103 per serving1. To make your prune puree, add 1 cup of prunes and ⅔ cup water to a food processor or blender. Blend until smooth and free of chunks.
2. Add vanilla and salt to mixture. Add coconut flour a little bit at a time, blending as you go, until you have a thick dough. You may need to scrape down the sides of your food processor!
3. Once dough mixture is formed and free of chunks, roll into balls with your hands. (I used a 2-teaspoon cookie scoop to portion my balls!)
4. Enjoy immediately or refrigerate in an airtight container for up to 1 week!

2. Add oats and coconut and pulse until well combined. Mixture will be fairly loose, but should come together when scooped and rolled into balls. (If your mixture is too dry, you can add a little more peanut butter or syrup, or a Tbsp of milk (plant based or dairy–whichever you use) at a time to help it come together.
3. Scoop mixture into 1″ balls and roll out to smooth. Place in an airtight container in the refrigerator and store up to 1 week. (You can also freeze these up to 1 month)
