Yet another of Nigella Lawson's clever re-inventions of the classic roast chicken, this Chicken in a Pot with Lemon and Orzo is an all-in-one crowd-pleaser. This is not exactly the same as perhaps the most precious recipe in my reper-toire, My Mother’s Praised Chicken, which found a home in my eighth book, Kitchen, but it owes a lot to it.
Check that the chicken and cubes of carrot are cooked through; it is as essential that the carrots are soft as it is that the chicken is well cooked. Add ¼ cup of orzo to the pan, making sure it's all submerged, replace the lid, and cook over medium heat for 10–12 minutes until soft.
Nigella Lawson's delicious one-pot recipe for Orzo with Meatballs is a comforting and warming pasta dish perfect for wintry weekend cooking. Orzo pasta is a non-negotiable staple in my kitchen.
Let’s discuss: Nigella (one of my most favorite people to grace this Earth) takes orzo and treats it as risotto. Then she adds peas, parmesan, and pancetta – bacon in my case. It really is fast and easy. And it’s husband friendly with the meat. I’m sure you could substitute a sausage of your choosing if you liked as well.
