The caramel syrup made with Natvia and blackstrap molasses was perfect for making a traditional low carb flan. I tried making a flan with another stevia erythritol blend sweetener and that flan came out with an eggy texture and taste. The flan custard made with Natvia was smooth and creamy with a sweetness very similar to real sugar.
In a large mixing bowl, gently mix together the eggs with the remaining 1/2 cup of sugar until creamy. Add the milk and vanilla and stir until well-combined. Divide the flan mixture evenly among the six ramekins, pouring right on top of the caramel. Cover each ramekin with aluminum foil and tightly seal.
Insert a small, sharp knife into the center of the flan. If the flan is set, the knife will come out clean. Transfer Flan to a rack and cool. Cover and chill until cold, about 4 hours or overnight. When you are ready to serve run a small, sharp knife around the edge of the flan to loosen it from the sides of the baking dish.
