Keep the rest of the spice blend in an airtight container in a dark place.Step2In the bowl of a stand mixer, combine the flour, ground almonds, sugar, sifted cocoa, ammonium bicarbonate (or 1 teaspoon baking powder), 2 teaspoons of the spice blend, the cinnamon, salt, and orange zest.Step3Start mixing using the beater blade. Add the water and finally the orange juice little by little. Cool for 10 minutes, then transfer the cookies to wire racks to cool completely, about 15 more minutes.
    4. For the icing: Put the chocolate chips and cream in a heatproof medium bowl and place the bowl over a pan of barely simmering water. Stir frequently until the chocolate has melted and the mixture is smooth.
