After managing Morrison’s Cafeterias for 17 years, I pretty much know all of their old recipes. Custards are sort of a poor man’s creme brûlée but a much less expensive alternative.
Spray a glass pie plate with PAM then pour the custard in the pie plate. Sprinkle nutmeg on top of pie. Put pie on the top rack of the oven, also add a cake pan of water to the bottom rack of the oven - this helps the custard stay moist and fluffy. Cook pie at 425 for 10 minutes, then reduce oven to 325 and cook another 30 minutes.
To save carbs, the pie is crustless, but for those who want a more traditional pie, you can certainly add a crust. I'd recommend using either a coconut flour pie crust or the one used in this recipe. Either way you slice it, this is a fantastic low carb pie. I'll certainly bake this one again.
