2. In a small bowl, beat the 2 eggs with 1/2 teaspoon salt.
3. Heat a large, non-stick skillet over medium-high heat with 1 tablespoon of the coconut oil until the oil is shimmering. Add the pork and cook until just cooked through, 3 to 4 minutes. Remove and reserve the pork.
4. Add the beaten egg to the hot skillet, tilt the pan to evenly distribute, then use a spatula to lift and move the egg around so it evenly cooks through and sets like a thin omelet, 2 to 3 minutes. Transfer to a cutting board to rest.
