1. In a food processor add the flour, sugar, salt, chilled cubed butter Pulse for 30 seconds until it resembles coarse bread crumb consistency. Pro tip - You can also do this in a bowl using a pastry blender or fork.
2. Roll the dough on a lightly floured surface. Start with a tapping motion, then roll from the center out. Pro tip - if the dough cracks too much, means it's too cold. Let it at room temperature for 5 to 7 minutes.
3. Follow the same process as above. Roll the dough to about 1/3 inch thick. Use the tinges of a fork to dock the dough. Use a cookie cutter larger than the muffin cups to cut out circles/disc.
4. Take a small golf size amount of chilled dough. Gently press the dough with your finger to the sides and bottom. Make sure you have a thin not thick crustPro tip - this is a great method to use when making mini tarts with kids. Also, when you want to chill out making tart shells in front of the TV 😜 Also the best method to use with rich shortcurst pastry.

2. In a medium-sized ovenproof bowl, such as a Pyrex bowl, combine the butter, oil, water, sugar, and salt.
3. The original recipe called for placing the bowl in a 410Β°F oven for 15 minutes, until the butter is bubbling and starts to brown just around the edges. I used the microwave on high for 8 minutes.
4. When done, remove the bowl from oven, dump in the flour and stir it in quickly with a wooden spoon until it comes together and forms a ball which pulls away from the sides of the bowl.
