1. Preheat the oven to 350º. Line 2 baking trays with parchment paper.
2. Beat the egg whites and salt until the mixture forms satiny peaks. Keep beating while slowly adding the sugar. Continue beating till the meringue is stiff and shiny. Sprinkle meringue with corn starch, vinegar and vanilla. Mix in gently.
3. Form meringues on the parchment paper about 4 inches in diameter (I traced 4 inch circles on backside of parchment paper for a guide to size). I use a piping bag with a star tip, but you can also use a gallon sized ziploc bag. Cut the corner off the bag to pipe meringue onto the parchment.
4. Make an indentation in the middle of each pavlova with the back of a spoon.

2. Line an un-rimmed (if available) baking sheet with parchment paper. Draw 3.5” circles on the parchment paper, and turn the paper over so no pencil markings get on the meringue.
3. Pour the egg whites into a large mixing bowl fitted with the whisk attachment. Whisk egg whites with an electric mixer on HIGH until the whites look like clouds. Keep whisking the whites and add the sugar slowly until the whites are stiff, glossy and smooth. Rub a little of the meringue between your finger and thumb – once no sugar granules can be felt, the meringue is ready.
4. Pour cream into a mixing bowl and whisk on MED-HIGH 1 minute. When it begins to thicken, add sugar and vanilla and continue to whisk just until firm. Do not overbeat (the cream will solidify).
