1. In a removeable insert of a 6-quart slow cooker (or a large 10-inch skillet if your slow cooker does not have a stove-top safe insert) set over medium heat, cook the bacon several minutes, stirring regularly, until bacon starts to brown and renders its fat. Add the onion and cook until golden, about 6-8 minutes. Add garlic and jalapeños and cook until the garlic begins to brown and is fragrant, about 1 minute. Stir in the tomatoes and cook another minute.
2. Fit the insert into the slow cooker (or transfer the mixture from the skillet to the slow cooker) and add the beans, the lard (if using) and 7 cups of water. Cover and turn the slow cooker to high. Your beans will be done in 3 to 4 hours, though you can hold them for longer. (My slow cooker can be programmed to switch from high after 3 ½ hours to a “keep warm” temperature for another 6 hours. Some slow cookers click to “keep warm” automatically; others need to be switched manually.)
3. When ready to serve, remove 2 cups of the beans and process in a blender or food processor until smooth. Add the smooth beans back to pot and stir in the cilantro. Taste and season with salt. Ladle into bowls and serve.

1. Rinse beans. Place in a large pot and cover with 7 cups of water. Let stand 6-8 hours, or overnight. Drain and return beans to pot.
2. Add 1 quart (4 cups) of fresh water to the pot with the beans. Bring to boil. Reduce heat; cover and simmer for 1 ½ hours (or until beans are tender). Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer 1-1 ½ hours longer (until beans are tender and gravy is thick). Season with salt and pepper, to taste.
3. You do not need to soak the beans. Simply place the dry beans, onion, garlic, tomato paste and seasonings in the slow cooker. Add 7 cups of water and stir. Cover and cook on LOW for 8-10 hours, or until the beans are tender.

1. Place all of the ingredients in the crock pot in order. I like to put the water in last because it tends to 'mix' everything nicely together.
2. If you do not like to mince garlic yourself, you can substitute 3-4 teaspoons of bottled minced garlic. (This is an indulgence, but it is a big convenience and sometimes you can find it marked down. Plus, one little bottle will last a long time.)
3. Cook on low 8 hours or high for 5 hours.
4. Serve hot and toss a pinch (or two) of shredded cheese on top for a little extra yum!
