Menudo is a Mexican stew made of tripe (or beef stomach). It is cooked in a red chile broth with hominy and topped with lime, onion, cilantro, and oregano. The Menudo meat is Beef Honeycomb Tripe, or Pancita de Res. I got it at ALDI, but you can find it already chopped up at most Mexican grocery stores.
If you are planning on cooking and preparing Menudo, be ready to spend hours in the kitchen smelling the delicious scent as it cooks. Although tortillas are a preference for eating Menudo soup, they are not necessary. You can also eat Menudo soup alone or mix it with white rice.
Menudo (similar to pozole and other soups and stews) tastes even better as a leftover than when you first make it. Cooks usually prepare the soup mid-week, then chill and reheat it on Saturday or Sunday, a process that concentrates the broth and intensifies the flavors.
