What’s the Difference Between Charro Beans and Borracho Beans? Charro beans and borracho beans (drunken beans) are very similar recipes. The difference is that borracho beans are cooked in beer while charro beans use broth and/or water.
Combine beans and water in a large slow cooker. Stir in olive oil, two onion quarters, garlic cloves and salt. Cook for 8 hours on low. Adjust salt as needed. Turn heat off; remove and discard garlic cloves and onion pieces. Cook chorizo in a sauté pan over low-medium heat, breaking it up into small crumbles. Add bacon and hot dog pieces.
Add salt to taste. In a large saucepan or clay casserole, cook the diced bacon and chorizo until some of its fat is rendered, and add the remaining onion and garlic, and saute until the onion softens. Add the tomato and chile, and continue cooking until the tomato releases its juice (10 minutes).
