This Mexican corn on the cob recipe was given to me by a Mexican friend of mine. Street vendors there sell their corn made this way. Preheat an outdoor grill for medium-high heat. Grill corn on the preheated grill until hot and lightly charred all over, 7 to 10 minutes. Roll corn in melted butter, then spread evenly with mayonnaise.
You will love this mexican corn recipe. Shuck corn and place onto a preheated grill. Heat for 8-12 minutes, rotating frequently until cooked through. In a mixing bowl, combine sour cream, mayonnaise, minced garlic, chili powder and cilantro. Mix well. Brush onto prepared, hot corn and sprinkle with feta cheese just before serving.
Remove corn cobs from grill, place in a bowl, season with salt and chili powder and drizzle with the herb oil. Crumble the feta over the top and serve the corn on the cob with the lime wedges.
