1. Preheat oven to 200 degrees.
2. To a large clean, dry bowl, add egg whites. Add cream of tartar and a pinch of salt. Beat until mixture is foamy. It's important for the bowl to be clean and dry so you meringue forms stiff peaks.
3. Slowly add syrup or sweetener while continuing to beat mixture. Add food coloring and flavoring if using at this point. Beat until very stiff peaks form (around 3-5 minutes). Meringue needs to be so stiff that you can flip the bowl upside down without it falling out.
4. Add meringue mixture to a piping bag fitted with a large star tip or desired tip. Pipe little star shaped cookies out onto a parchment lined baking tray. Space about ½ inch apart.

5. Preheat your oven to 225 degrees F. Place silpats or parchment onto 2 baking sheet pans.
6. Place egg whites into clean bowl or stand mixer. Start whipping on a low speed and as it begins to form continue to increase speed. Sprinkle in salt and continue to whip egg whites. Drizzle in vanilla extract. When you start to see soft peaks forming, add a small amount of the sugar free sweetener. Continue to add small amounts while whipping at a high speed. Continue to whip until the egg whites have started to pull away from the sides of the bowl. If you're unsure if they are stiff, you should be able to flip the bowl over and nothing moves or slips.
7. Place half of the whipped whites into the decorating tool or pastry bag with a star tip.
8. Make small swirls onto the baking sheet pan using the small circle shape on the silpat or on parchment measuring 1.25 inches. Continue with the remaining whipped whites. You should be able to make 44 cookies.

4. Fill into a piping bag and pipe cookie shapes onto a baking sheet lined with baking paper. If you don't have a piping bag, simply spoon little cookie heaps onto the sheet!
