1. Preheat oven to 375°F. In a bowl, thoroughly mix egg white and cheese (30 seconds). With your hands, thinly spread/shape the mixture into equal sized circles on a sheet pan lined with parchment paper.
2. Bake in center of preheated oven for 15 minutes. Remove, carefully flip each tostada and return to oven for 10 minutes.
3. Remove and pile on your choice of toppings (I used shredded chicken and more cheese—optionally, return to oven for 1-2 minutes to melt cheese).
4. Garnish with your choice of condiments (like guacamole, sour cream, salsa or green onions) and enjoy (see notes for storage/prep tips)!

1. Preheat oven to 350F.
2. Place cheese in circles on a non-stick baking sheet (a silicone baking mat works wonderfully here), approximately 4" in diameter. This recipe should make 4-6 tostadas, depending on the size
3. Place in oven for 8-12 minutes. You want it to get crispy in the center, but not so much so that the edges begin to burn.
4. Remove from oven and allow to cool for 5 minutes.
