1. Cut chicken breast in half lengthwise pat dry with paper towel; season with salt and pepper (be careful with the amount of salt).
2. Turn the pressure cooker on the saute setting. Add olive oil; when it is hot (when the screen read HOT), place the chicken breast and cook until golden brown on both sides 2-3 minutes per side. Set aside.
3. Saute onion, garlic, sun-dried tomatoes, and Italian seasoning for 2 minutes. Add chicken broth or stock to deglaze the pot; add chicken breast, kalamata olives, artichokes hearts, and lemon juice.
4. Place the lid on the pot and lock it in place. Turn the steam release knob to the Sealing position. Cancel the Sauté setting and then press the Pressure Cook/Manual button (or dial) and the + or - button (or dial) to choose 2 minutes.
