1. In a large skillet sauté diced onions and garlic in 1 tablespoon olive oil on medium to medium-high heat. Cook until onion is translucent, approximately 3 minutes. Remove from heat.
2. In a large bowl, combine your ground beef, parsley, rosemary, egg, salt, pepper, and sautéed onion and garlic. Roll into meatballs the size you prefer. Mine are approximately 2 to 2 1/2 inches in diameter. This produces 16 - 18 meatballs. You can of course make them smaller if you like.
3. Add your remaining 1 tablespoon olive oil to the skillet over medium high heat. Brown your meatballs on all sides (you may need to do this in batches so you have room to flip them). This takes about 3 minutes per side. Continue rotating the meatballs so that all sides are getting some browning. Remove meatballs from pan and set aside.
4. Scrape up all the remaining bits in the skillet and leave them in there. That's going to make your sauce even better. (If you have a lot of grease I recommend draining that. You should be fine if you used a very lean beef.)

1. Preheat the oven at 400 F.
2. In a large bowl, combine the ground beef, garlic powder, onion powder, Italian seasoning, Parmesan cheese, breadcrumbs, salt, pepper, egg, and milk. Mix together until thoroughly blended.
3. Using a tablespoon for measuring and your hands for rolling, start making those meatballs. Form meatballs that are approximately 1 1/2 inches in diameter and place the meatballs in a single layer in the pan. I just rolled them between my palms and got 18 average size meatballs.
4. On medium high heat in a large oven proof skillet (such as cast iron), brown meatballs on all sides, carefully turning so they don't break apart. Cook them for about 10 minutes. They will not be cooked throughs point and will finish cooking in the oven.

1. In a medium size pot, heat olive oil over medium heat. Add garlic and saute until golden, being careful not to burn. Add crushed tomatoes, onion, salt, pepper, oregano, basil and bay leaf. Stir and reduce heat to low. Cover and let simmer on low 5-10 minutes.
2. Meanwhile, in a large bowl, combine ground turkey, breadcrumbs, egg, parsley, garlic and cheese. Using wet hands, mix all the ingredients well until everything is combined. Form small meatballs, about the size of a ping ping ball (1/8th cup each).
3. Add the meatballs to the sauce and cook about 20 minutes. Discard the bay leaf and serve over pasta or on whole wheat Italian bread for a meatball hero.
