Separate egg yolks and egg whites. Add egg yolks to bowl with butter and sugar and beat until combined. In a medium bowl, whisk together flour, baking powder, cornstarch, and matcha powder. Slowly fold flour mixture into bowl with butter and sugar until completely combined, adding 2 tablespoons water too loosen, if necessary.
Place in a fridge or a freezer while you prepare the matcha cream filling. Soak the gelatine in 4 tbsp. water for 5 minutes. Add 4 tbsp. of boiling water and mix until the gelatine dissolves completely. Let it cool down (or prepare the gelatine according to instructions on the packet). Using a stand electric mixer, whip the cream until almost firm.
Remember to mix all the flour (cake flour, corn starch & matcha powder) in a large bowl properly to become matcha flour as this will help the matcha powder to blend into the mixture better. (Step 1 down below) I used high-quality culinary grade matcha bought from an ingredient shop that is specifically used for baking.
