1. Combine flour, yeast, and salt in a large bowl. Mix well to distribute yeast and salt with flour.
2. Stir water into flour mixture and mix well until dough is completely saturated. It will be a sticky "shaggy" mix.
3. Cover bowl with plastic wrap and let dough rise in a warm place for 1 hour. An oven that is off, but with the electric light or pilot light on works well. If your oven has a bread proofing option, that works exceptionally well.
4. After the dough has risen for 1 hour, place it on a well-floured surface and sprinkle with flour. Using a bench scraper or your floured hands, fold dough over on itself a few times until it is no longer sticky. This process takes about 10 folds. Next, shape the dough into a ball. 1. Whisk together in a large bowl both flours, salt, and yeast. (If using a dry sugar, add it in now as well.)
      2. Add water, melted butter (or oil if using), and honey to bowl with the flour mixture.
      3. Mix all ingredients until they come together to form a wet, "shaggy" (sticky) dough.
      4. Cover dough with a plastic wrap or a towel dusted with flour (so the dough will not stick to the towel), place the bowl of dough in a warm place (see Baker's Tip immediately following), and allow the dough to rise for 1 1/2 hours if using instant yeast or 1 3/4 hours if using active yeast.
