1. Preheat oven to 180C/160C fan/gas mark 4. Line a 20cm x 30cm baking tin with parchment paper.
2. Mix together flour and caster sugar. Rub in butter until mixture resembles breadcrumbs. Knead lightly to form smooth dough.
