1. In a medium-sized cooking pot, heat the 1 liter of water along with 5 tablespoons of vinegar over high heat. Add the octopus and reduce heat to medium.
2. Cook for approximately 2 hours, or until the octopus feels soft when you prick it.
3. Set aside to cool.
4. Cut the octopus legs and head and place it in a wide food container. Drizzle with the remaining 5 tablespoons of vinegar, olive oil, and oregano on top.
