2. Over low heat, combine artichoke hearts, olive oil, salt, thyme, oregano and crushed chili flakes in a non-reactive saucepan. Cover and cook 10 minutes, stirring occasionally.
3. Remove from heat and let cool to room temperature. Stir in lemon juice.
4. Let cool for 30 minutes. They'll taste even better if you wait overnight.

4. Pour on top lemon and olive oil to cover. Put on the lid and shake gently to coat all the artichokes and evenly disperse the dressing.
