1. In a medium-sized bowl whisk together the flour, baking soda, baking powder, salt, and cornstarch. Set aside.
2. In the bowl of an electric mixer fitted with a paddle attachment or large bowl with a handheld electric mixer combine butter and sugar, mix on medium for around 2 minutes, until light and fluffy. Make sure to scrape the sides of the bowl so everything is evenly combined.
3. Add egg, vanilla, and maple extract mix until fully combined. The mixture may seem a little curdled at first just keep mixing so it is as best combined. Gently fold in dry ingredients then stir in the toasted pecans.
4. Scoop 1.5 tbsp size cookies, with a medium cookie scoop. Place cookie dough balls on a wax-lined tray that can fit in the refrigerator or I like to use my favorite plastic containers. Let the dough balls chill for two hours.

1. Whisk the flour, baking soda, and salt together in a medium bowl. Set aside.
2. Using a hand mixer or a stand mixer fitted with a paddle attachment, cream the butter and brown sugar together on medium speed until smooth, about 1-2 minutes. Add the egg and beat on high until combined, about 30 seconds. Scrape down the sides and bottom of the bowl as needed. Add the maple syrup, vanilla extract, and maple extract, then beat on high speed until combined.
3. Pour the dry ingredients to the wet ingredients, then mix on low until combined. Add the pecans, then beat on low speed until combined. Dough will be creamy and soft.
4. Cover and chill the dough for 2 hours in the refrigerator (and up to 3-4 days). If chilling for longer than a few hours, though, allow to sit at room temperature for at least 30 minutes before rolling and baking because the dough will be quite hard.

1. Pre-heat the oven to 175 Celsius/350 Fahrenheit.
2. Grind pecan halves in the food processor. I used scales to weigh them, but if you don’t have scales, roughly 2 ½ cups of pecan halves should give you the 2 cups of ground pecans you need.
3. Add all other ingredients and mix until well-combined.
4. Form little balls in your hand and flatten into a cookie. Place cookies onto a tray lined with baking/parchment paper. If desired, place a pecan half on each cookie.
