1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
2. Add all ingredients to a large bowl and mix to combine. Use a medium cookie scoop to drop cookie dough onto baking sheet. Gently flatten with your hand.
3. Bake for 8-10 minutes. Once done baking, allow cookies to cool on cookie sheet for 10 minutes before transferring to a wire rack to finish cooling. Then sprinkle with fancy sea salt (and/or drizzle with a little melted chocolate). Makes 20 cookies. Enjoy!

5. In a food processor, combine the coconut and almonds, and grind until they resemble oat flakes. Add the sweetener and collagen, and pulse a few more times to combine.
6. Transfer to a large bowl and stir in the almond butter, egg, and extracts until well combined. Use about 2 tablespoons for each cookie and roll into balls.
7. Place on the prepared baking sheet and press down to about 1/2 inch thick. Bake 15 to 20 minutes, until golden and firm to the touch. Remove and let cool on the pan. Do note: the cookies may release a lot of grease during baking but this will reabsorb as they cool.
