Homemade mango jam recipe is the simplest fresh fruit jam recipe you will ever make. It had a wonderful tropical flavor and tastes delish. The best part about this jam recipe is you do not need any pectin. Thought ripe mangoes do not contain much of natural pectin like apples, the lime juice we add here makes up for it.
In mango jam, lemon or lime juice add pectin and help bring out the tropical flavor of the fresh mangoes. There’s another reason to add citrus juice though…mangoes are low acid fruits. They’re not actually safe for canning without added citrus juice. For that reason, the citrus juice is not optional in this simple mango jam recipe.
While lemon juice acts as natural preservative, it also rounds off the mango flavor very well. I do not prefer to add cardamom powder or vanilla in this recipe as it overpowers the flavor of mango. Also there is no ghee or oil in this recipe. This is a vegan and gluten free mango jam recipe.
