Mango Habanero Salsa. Takes 20 minutes, serves 2. In a medium saucepan, heat the oil over medium heat. Add the onions and garlic and sauté until onions are soft and translucent, about 8 minutes. Add the mangos, tomatoes, habanero (1 habanero for mild heat or 2 for high heat), lemon juice, honey, salt and chili powder.
This sweet and spicy salsa combines mangoes, habaneros, fresh cilantro and lime. Finely chop the garlic, sprinkle with 1 1/4 teaspoon salt, and mash into a coarse paste using flat side of a large knife. Mix the garlic paste with cilantro, oil, mango, scallions, habanero and lime juice. Set aside for at least 15 minutes to allow the flavors to meld.
Preheat oven to 425 degrees F (220 degrees C). Place habanero pepper, mango, and onion on a baking sheet. Roast on the middle rack of the preheated oven for 10 minutes. Wearing gloves, remove stem from habanero pepper and place pepper in a small food processor or blender; add mango, onion, garlic, cilantro, lime juice, and salt.
Pineapple Mango Salsa – In place of one mango, add 1 cup diced pineapple. Mango Habanero Salsa– In place of jalapeño, add 1 habanero pepper that has been seeded and finely diced. Peach Mango Salsa – In place of one mango, add 1 cup (about 1 large) peach that has been peeled, pitted, and diced.
