1. Combine apples, mangoes, red pepper, sugar, onion, raisins, vinegar, and gingerroot in a large saucepan. Bring to a boil over high heat, reduce heat, and boil gently, uncovered, for 20 minutes or until fruit is tender and mixture is thickened, stirring occasionally.
2. Add lemon juice, curry powder, nutmeg, cinnamon, and salt; boil gently for 5 minutes.
3. Remove hot jars from canner and ladle chutney into jars to within 1/2 inch of rim . Process 10 minutes for half-pint jars and 15 minutes for pint jars.

2. Add oil to pan, turn to medium and bring to temp. Add your onions, garlic, red pepper flakes and black pepper. Sauté until onions and garlic are translucent. About 3-4 minutes. If you're oil-free, use water or veg stock with a good non-stick pan.
3. Add mangos to the mix and cook for an additional 3-4 minutes.
4. Add all of your liquids, turn the stove on high and bring to a boil. Once boiling, add brown sugar and reduce it to a simmer. Simmer for 20-30 minutes until all liquid is gone and you're left with a thick sauce or jam-like consistency.
