1. This is like my youvetsi recipe minus the meat. It's a yummy side dish that can be prepared in very little time. Give it a try!
2. Heat 1/4 cup olive oil in a Dutch oven pot or saucepan. Add onions and cook over medium-low heat until soft and golden. About 10-15 minutes. Add garlic and cook for about 5 minutes or until soft and golden. Add tomato puree, spices, salt and pepper.
3. Cook for 10 minutes until the sauce gets nice and thick. Add the chicken stock or water and bring to a boil. Pour the sauce in a baking dish and add the uncooked orzo. Bake covered with foil for about 25 minutes.
4. Raise temperature to 400 degrees, remove the foil and cook for another 15 minutes uncovered.
