Mai tais are traditionally made using Jamaican rums and rhum agricole (a rum made from pure pressed cane juice), but overproof rums are also occasionally added to please particularly ruthless palates. Mai Tais are typically served over ice in a lowball cocktail glass. Once you pour in the dark rum, resist the urge to stir the drink! You want to serve it with the layered effect. Garnish as little or as much as desired. You can go all out as I like to do with the cherry, pineapple, mint, and lime or just use whatever you have on hand.
Mai tais are a rum-based cocktail, so you will want some rum. We used Appleton Special Rum and then our favorite dark rum for this recipe. You can use any rum you’d like, though we suggest sticking with the Appleton Special due to its flavor profile. You can’t make a tropical cocktail without tropical juices.
