3. Remove dough from bowl and spread out evenly in pan. Cover with a towel and let rest for 30 minutes. Preheat oven to 400 degrees. Remove towel. Brush dough with 1 to 2 tablespoons of the olive oil. Sprinkle top with additional salt and rosemary.
4. Bake for 20 minutes. Remove from oven and drizzle with remaining oil. Yield: 1 loaf At this time I do not know of a substitute for the semolina. Semolina can be found at many major grocery stores either with the pasta or on the baking aisle.

2. Place half of your Carbquik in a mixing bowl and add the ingredients from the first two steps to that bowl. Then on a medium speed, mix the ingredients until they are blended and somewhat elastic. Add the remaining Carbquick and knead the dough. It should take about 8-10 minutes using the dough hook to form a ball. You can also knead your dough by hand.
3. Place the dough ball into the greased bowl from the first step. Cover and allow this to rise. It should take about an hour to get the dough to a good place for your focaccia.
4. Line a cookie sheet with parchment paper . Place to dough ball on to the paper and then place another piece of parchment paper over it. Next, use a rolling pin to roll the dough out. Remove the top layer of parchment paper and poke holes in your dough. You can use the end of a wooden spoon making holes every 2-3". Replace the paper and allow the dough to rise again for an hour.
