2. Place on the BBQ and cook, tossing occasionally until onions are caramelized, about 20 minutes. (This could also be cooked on the stove.)
3. Season shrimp with chipotle chile powder, salt and pepper.
4. While the onions are cooking, heat a large frying pan on high heat. Add oil.

1. In a small bowl whisk together all fajita seasoning ingredients.
2. Add the shrimp to a shallow dish and sprinkle with half of the seasoning. Mix well to coat, then set aside.
3. Heat a tablespoon of oil in a large cast-iron skillet over medium-high heat. Add the onions and bell peppers and saute for 4-5 minutes until the vegetables have softened.
4. Add the remaining seasoning and mix well. Set aside on a plate. Heat the remaining oil and add the shrimp. Cook for 3-4 minutes until they are pink and cooked through.
