In a bowl, add shrimp, homemade fajita seasoning, 2 tablespoons of oil, lime juice, and minced garlic. Toss to coat and set aside to marinate. TIP: Marinate shrimp for at least 15 minutes, but no longer than 30 minutes. If you marinate for longer than 30 minutes, the shrimp will turn into ceviche and become “cooked” from the acid in the lime juice.

And if you like them softer, leave them on for about 3 minutes longer. Transfer and set aside on a plate.
