1. Take 210g Salted Butter and cut it into slices. Place them to form a rough square on top of a piece of greaseproof paper. Cover with another piece of the paper.
2. Use a rolling pin to flatten the butter into a more even layer. You are looking to make a square about 20cm x 20cm. (Do note that these measurements will change if you have adjusted the recipe quantities).
3. To get a nice even square you will inevitably have to use a knife to take of some runaways bits of butter and squidge them back into any gaps.
4. Use the back of a long knife to press the edges back to the same thickness as the rest of the square.

3. To make the sauce in a saucepan melt the butter, add the corn flour and quickly whisk until smooth. Add some of the milk, turn up the heat and whisk until the sauce thickens, then add the rest of the milk and whisk until the sauce starts bubbling up. Remove from the heat, stir in the fromage frais and mustard and season to taste. Add the raw spinach and stir until well combined and reduced in size. Season to taste and spoon over the salmon.
4. Unroll the pastry and place over the pie gently pressing in around the edges to remove any air bubbles. Trim to fit your dish. Brush the pastry lightly with the beaten egg.
