1. Preheat the oven to 375 degrees. Spray a 9 x 13 baking dish with oil.
2. Spray a large nonstick skillet with oil and heat over medium heat. Add in the potatoes and sausage, cover and cook for 10 minutes.
3. Add the red pepper and sauté until vegetables are tender, about 5 to 6 minutes. Add the tomatoes and cook 2 - 3 minutes.
4. Add the vegetables and sausage to the prepaired baking dish.
