1. Prepare vegetables and start roasting: Preheat oven to 400 degrees. On a rimmed baking sheet pan, combine broccolini and grape tomatoes with 2 tablespoons olive oil. Lightly season with salt. Spread vegetables evenly across pan so they are not touching on another. Roast in oven for 9 minutes.
2. Prepare shrimp, feta and finish roasting: While vegetables roast, combine shrimp, olive oil, oregano and red pepper flakes in a large bowl. Measure 4 ounces of crumbled feta. After vegetables roast for 9 minutes, remove rimmed baking sheet from oven and place shrimp between vegetables. Flip the broccolini with tongs. Evenly sprinkle crumbled feta across the top. Roast for another 6 minutes, until shrimp turns opaque.
3. Serve: Remove baking sheet from oven and drizzle with a tablespoon of lemon juice (if desired). Plate and serve.

1. Pre-heat oven to 400F
2. Cut the florets off of the stem of the cauliflower and discard the stem. Add the florets to a food processor and process until it resembles the texture of rice. Alternatively, you can buy already riced cauliflower in the fresh or frozen section of the supermarket. If your "rice" is frozen and in chunks, place in a microwave safe container and microwave in 30 second intervals until the chunks can break apart.

1. Chop cauliflower into chunks and place in a food processor. Pulse to finely chop until it resembles rice, set aside.
2. In a small bowl, whisk together San-J Tamari, honey, ginger, and red pepper flakes; set aside.
3. In a large skillet or wok, over medium-high heat, heat up sesame oil. Add in the white part of the onions and sauté for about a minute. Add frozen peas and carrots, stir, and cook to heat through for about 2 minutes. Move veggies to one side of the wok and add in beaten eggs. Cook eggs on one side of the pan, moving the mixture around as it cooks until cooked through. Add shrimp, and cook, for about 2 minutes until they’ve turned pink.
4. Add in riced cauliflower and stir to combine. Pour the Tamari sauce mixture over the top, making sure to distribute evenly throughout and cook for an additional 4 minutes, until cauliflower has softened but has an “al dente” texture. Turn off heat, sprinkle green onions, cover for a minute to soften, and serve.
