1. In a large bowl, combine 1 cup of the flour, sugar and instant yeast. If necessary, multiply these quantities by the number of loaves you want to make.
2. Add the oil and hot water and mix until the texture is smooth and even.
3. Immediately after, gradually add the remaining flour. At some point it will be more convenient to mix it all up by hand. Mix and fold in the flour until the remaining flour no longer sticks to the dough and remains in the bottom of the bowl.
4. On a flat, floured surface, hand knead the dough until smooth and elastic, about 2-3 minutes. Do not knead it too much, otherwise the dough will rise less well afterwards.

1. Preheat the oven to 325℉ (163℃) and grease an 8 ½ inch loaf pan & line with parchment paper, with some extra hanging over the sides to make the bread easier to remove from the pan.
2. In a large food processor combine the almond flour, golden flax meal, baking powder, powdered erythritol, xanthan gum, and sea salt. Pulse until combined.
3. Add the melted butter to the processor and pulse, scrape down the sides with a rubber scraper as needed, until a crumbly texture forms. Set aside.
4. In an extra-large mixing bowl, use a stand mixer or hand mixer to beat the egg whites and cream of tartar until stiff peaks form.

1. In a large bowl, whisk all the dry ingredients together. Stir in water until the mixture forms a shaggy but cohesive dough. Do not over-work the dough. The less you "work" it, the more little air pockets will form.
2. Turn dough ball coating outside in olive oil and cover bowl with towel or grocery bag.
3. Let dough sit at room temperature for anywhere from 8-24 hours. Dough should have bubbles visible and rise a bit. This does not seem to really rise that much so don’t expect it to “double”.
4. When you decide the dough is ready, preheat oven to 450 degrees F. Put your Dutch oven, uncovered, (I put the lid on the shelf below) into the preheated oven for at least 30 minutes.
