Season the chicken with salt and pepper, then nestle on the bottom of the pot. Mix the cumin, paprika and garlic powder together and sprinkle on top. Flip after 3-4 minutes. then cook an additional 1-2 minutes.
2. Pour the salsa over the chicken breasts. Lock on cover and manually set the Instant Pot to pressure cook for 10 minutes on High. Use quick release once done. (If you are plan to shred the chicken, use natural release, so it will break up easier.)
3. Cheese can be sprinkled over the top in the pot or over each serving.

Naturally release pressure after cooking time is up (just switch off the instant pot and leave it alone until pressure is gone).
4. Finish sauce: Carefully remove thighs. Set the Instant Pot to sauté. Pour thickener slurry into pot, stir well and simmer until sauce has thickened. Stir in butter until melted and serve sauce over chicken.
