Keto blueberry muffins are refined sugar free and only 4g total carbs/ 3g net carbs per muffin. Too many blueberries are not keto as they have a higher amount of sugar and calories than most berries. However this recipe is only using a few in each muffin so the carbs are low enough that they still fit within keto macros.
Preheat oven to 350 degrees F. Generously coat a muffin tin with cooking spray. Sift almond flour, coconut flour, baking powder, baking soda and salt together in a large bowl. Add blueberries and toss to coat. Whisk eggs, milk, brown sugar, oil and vanilla in a medium bowl. Add to the dry ingredients and stir until combined.
Blueberries are not the lowest in carbs, so if you like your low-carb muffins with even lower carbs, you can use frozen or fresh raspberries or cranberries. When I bake these muffins for my toddler, I use dried organic cherries or cranberries which are sweetened with apple juice.
