DirectionsStep1Preheat oven 350 F. Prepare a baking sheet with a silicone slip mat.Step2In a small bowl, sift together flour, shredded coconut, cinnamon and baking powder.Step3In another larger bowl, mix together egg whites, vanilla and sugar. Slowly fold in the flour mixture.Step4Last stir in the coconut oil and quinoa (adding the oil in last prevents it from hardening).Step5Drop 2 heaping tablespoons of batter onto the baking sheet to form a cookie. Repeat until all the batter is gone.Step6Bake 10-12 minutes until cookies are slightly browned around the edges.Step7Remove from the oven and allow to cool 5 minutes on the baking sheet before gently removing and transferring to a cooling rack.
