Set aside with a slotted spoon and transfer to a plate, leaving the fat in the skillet.Step4At the same time, add the pasta to the salted water, and add the broth to the bacon fat and simmer the broth to reduce by 1/3, about 8 to 10 minutes.Step5Cook the pasta until al dente, under-cooking by 2 minutes, about 8 to 10 minutes. Drain pasta but do not rinse.Step6To the broth add the arugula, parsley and 1/4 teaspoon salt and black pepper.Step7Add drained pasta, raise heat to high, and toss to coat with sauce.Step8Finish cooking the pasta in the broth for 2 minutes, then remove from heat, stir in cheese, and toss. The spaghetti will soak up any liquid. Chop bacon and add to pasta.Step9Working one at a time, carefully crack each egg into a small bowl and very gently slide into barely boiling poaching liquid. Ratings: 29Category: Main CourseCuisine: ItalianTotal Time: 30 mins1. Bring a large pot of water to a boil. Add the spaghetti and cook until al dente according to the package directions. Before draining, reserve about ½ cup of the pasta water. (Just scoop it out with a coffee mug; it doesn’t need to be precise and the mug’s handle makes it safer to dip.)
    2. Meanwhile, in a large skillet, cook the bacon over medium heat to your desired crispness. Crumble the bacon. Pour off all but 1 teaspoon of the bacon grease from the skillet. Return the bacon to the pan.
    3. Add the kale and peas and cook for 5 minutes, stirring often, until the kale wilts and the peas thaw and warm up. Add the garlic, then remove the skillet from the heat and let cool for 3 to 5 minutes.
    4. Now comes the tricky part: Add the hot pasta to the skillet, then add the beaten egg and very quickly mix together. If you’re not quick, you’ll get scrambled eggs and not sauce. If this happens, don’t fret . . . just mix very well and most of the lumps will dissolve. Add ¼ cup of the reserved pasta water and mix well. Add more pasta water if needed to thin out the sauce.

Calories: 435 per servingCategory: Dinner, Gluten Free, Nut Free, Pasta1. Add eggs, cheese and garlic powder to a medium bowl and whisk until combined. Set aside.
    2. Add bacon to a large skillet or pan and place over medium heat, cook bacon on both sides until golden brown. If the pan starts to smoke at any point, simply lower the heat. I always cook my bacon on medium to medium low heat.
    3. Once bacon is done, blot with a paper towel to absorb excess grease, then chop into bite sized pieces and set aside. There shouldn’t be any bacon grease in the pan unless you used regular pork bacon. If you used regular bacon, drain bacon grease from pan, leaving only about 1-3 teaspoons grease in the pan. You’ll be using this pan for the pasta so remove it from the heat and the hot burner and set on aside on the stovetop.
    4. While the bacon is cooking, place a large pot of water over high heat and add in a generous amount of salt. Once the water boils, stir in the angel hair pasta and cook until al dente, about 6-8 minutes.

    2. Cook the bacon under the grill (broiler).
    3. Put the eggs in a bowl and whisk and then add the creme fraiche and cheese.
    4. Once the spaghetti is cooked, drain it and then put it back into the pan. If you have an electric hob, turn off the heat and put the pan back on it, or if you have a gas cooker, turn it to the lowest setting and put the pan back on it. Add the egg, yogurt and cheese mixture to the spaghetti, along with the bacon and stir briskly, so the eggs do not scramble. Stir and heat for around 2 minutes.
