These quick and easy Low Carb Blueberry Muffins are tender and bursting with blueberry goodness. These sugar-free muffins are made with almond flour so they are perfect for keto, low-carb, gluten-free, Atkins, grain-free, and Paleo diets.
ADD THE DRY INGREDIENTS: Place a fine mesh sieve over bowl and sift in the almond flour, monk fruit sweetener, baking powder, baking soda, cinnamon, lemon zest and salt and mix until combined. Gently fold in the blueberries. FOLD IN BLUEBERRIES: Add blueberries into the bowl and gently fold into the batter.
Blueberries are not the lowest in carbs, so if you like your low-carb muffins with even lower carbs, you can use frozen or fresh raspberries or cranberries. When I bake these muffins for my toddler, I use dried organic cherries or cranberries which are sweetened with apple juice.
